We opened in the spring with a second-hand deck oven, four staff and a menu that fit on a single chalkboard: three breads, two pastries and tea. The first bake went in at 5:40 in the morning. It still does.
By the end of that first winter the bread was selling out before eleven, and people had started asking whether we could do lunch.
