We opened in 2018 with one oven and a short list of things we wanted to get right. Eight years on, the bread still goes in before sunrise and the grill still runs past midnight.

Our story
It started as a small bakery counter in Saidu Sharif. People came for the bread, then stayed for tea, then asked whether we could do dinner. So we built a kitchen behind it, then a bar beside that.
Today the same three sections do breakfast for shopkeepers, coffee for students, family dinners at nine and late plates at half past midnight. Nothing on the menu is there to impress. It is there because someone kept asking for it.

Chicken cut in-house each morning. Dough proved overnight. Sauces made on the day and finished to order — nothing sits under a lamp waiting.
The result is plain food done carefully, at prices that make it easy to come back on a Tuesday.

Packed in eco-friendly boxes and bags — paper, board and plant-based cartons, no plastic foam — then out with our own riders till quarter to one.

The bakery starts at 5:40 AM. Nothing on the bread shelf is older than the day you buy it.
Chicken cut in-house daily, cold chain kept, stations cleaned down between services.
Honey, fruit and dairy sourced from growers around Swat wherever the season allows.
Who runs it
None of them is often behind a desk. On most days one is at the counter, one is somewhere between a supplier's yard and the pass, and one is walking the room — which is why decisions here still get made in the room they affect.

Everything the house has added since — the kitchen, the bar, the shelf of valley produce — started as something a guest asked him for and he could not bring himself to refuse. He still buys the honey himself, and still knows the name of every family it comes from.

@labalkhanHe turned a busy bakery counter into three that can run at once — the rota, the suppliers, the second prep room, the riders. He is the reason the team is paid on the first of the month and the reason the policies on this website are published rather than filed away. Ask him why a plate takes eleven minutes and he will happily explain all eleven.

He came in as the third pair of hands and stayed as the third name on the door. Where one of them watches the pass and the other watches the numbers, he watches the room — which table has been waiting, which regular has not been in for a fortnight, which supplier deserves a longer look. Most of what has changed here in the last few years began as something he noticed before anyone else did.
